Garlic Honey Dijon Chicken 

There are no words that can do this dish JUSTICE.  I am absolutely in love with this recipe.  I found it on Ashlyn Edwards' blog, Belle of the Kitchen, while searching for a recipe with garlic, honey, and dijon mustard, and I am SO incredibly happy that I did.  The sauce is sticky & savory with a bit of sweetness, making it the perfect addition to rice and veggies for a quick and easy weeknight dinner!  And when I say quick and easy, I am not lying.  This is definitely a go-to when my boyfriend & I are busy with work and don't have a chance to plan ahead for dinner.  

If you've got these in your kitchen, you're good to go! 

  • Chicken
    **Her recipe calls for chicken thighs, but my boyfriend prefers leaner cuts, so I always use a package of chicken breasts & will slice them into thin tenders

  • Soy Sauce or Coconut Aminos (1/4 Cup)

  • Maple Syrup or Honey (3 TBS)

  • Avocado Oil (4 TBS)

  • Garlic Cloves (3-4 cloves, but I use more)

  • Dijon Mustard (2 TBS)
    **I like the grainy texture of whole grain dijon, so I personally do 1 TBS of this and 1 TBS of regular dijon, and have included pictures for reference.  

  • Orange Juice (2 TBS)
    **I never have this on hand and always forget to buy it, so every time I've made this dish I haven't included OJ but I bet it tastes bomb. 

  • Herbs & Seasonings
    **Salt, Pepper, Garlic Powder, Rosemary 

Now, all you've got to do is season your chicken and whisk together the sauce while it's cooking, then pour the sauce over the chicken & let them cook together, and you're done!  It's that easy!
